Fenugreek is a common ingredient in Indian dishes. It contains a high amount of fibre and minerals so it is used to produce dietary supplements. A tea made using fenugreek seeds relieves menstrual cramps and known to increase milk supply in breastfeeding women.
In the middle east, fenugreek seeds are used to make a popular dessert called Hilbeh. The fenugreek seeds are soaked, boiled and then mixed along with other seeds like anise and nigella, with flour, semolina, sugar, olive oil, baking powder and yeast. Then the batter is baked in the oven and served with sugar syrup.
