Light carob molasses is made by taking the mature carob pod and going through a process of soaking the carob pods into a juice and distilling it further into a light molasses.
We make these from our own carob trees with absolutely no sugar added, as the carob is already sweet. Because there is no sugar, the molasses comes out much lighter in consistency.
