Soybeans are a good source of antioxidants. They are high in fibre and protein, and they are widely used in vegetarian diets. Also, the milk made of soybeans has a similar nutritional properties to cow milk, yet soy milk is lactose free.
Soybeans are also used in cooking mostly to add extra protein, as it won't affect the taste of food very much. Like other legumes, dried soybeans should be soaked before using for cooking.
